Lemon Sorbet
Ingredients:
(serves 4)
4 glasses of water
400g sugar
the rind from 3 lemons
and 1 orange
3 glasses of lemon
juice
Boil up the water in
which you have dissolved the sugar. Add the rind from the citrus
fruits. Let the syrup cool, then pour over the lemon juice.
Filter the liquid
through a bunt, before putting it into the sorbetière or
ice-cream maker.
Take it out before
it hardens, as it should be eaten when it is still soft.
