           Vegetable Aioli
Ingredients:

20 cloves of garlic
1  cooked potato
salt
pepper

 
    
75cl  olive oil
1  tablespoon warm water
1  tablespoon lemon juice
    
Crush the cloves of garlic and the sliced potato in a mortar. Season with salt and pepper, pour the oil in like a fine thread, whilst stirring slowly with a spoon. When half the oil is added, add also the warm water. Finish off by adding the lemon juice.
