Calf's Brains Meatballs
Ingredients:
(serves 2)
500g calf's brains
3 tablespoons of flour
1 egg
4 tablespoons of
breadcrumbs
70g butter
salt
1 lemon
Put the calf's brains
into fresh water, that must be renewed a few times. Parboil them in
lightly salted water. Drain them and cut them into small pieces,
flour them and dip them in the beaten egg and then in the
breadcrumbs. Fry them in plenty of butter which has been browned
beforehand.
Season with salt.
Serve them piping hot with wedges of lemon.
